Virgin Mojito

Virgin Mojito

It’s been such an exciting week. After all the encouragement from friends and family, I finally decided to start blogging. Now, the hard part was deciding on what you want to start off with.  Agreed, there are millions and millions of dishes there, but I had the tough job of choosing. Finally decided that I would make one dish of everything in the beginning to start with..:)(clever me!!!)

Summer has started and How??? It’s really hot in Dubai now and the only thing to keep you well hydrated are drinks, other than water.  The lemon –mint virgin mojito or the lime-mint cooler is really refreshing, especially when you come from outside or even if you are at home the whole day. It’s one of the easiest cocktails to prepare, so make your drink and enjoy your summer.. 😀

¼ cup, fresh mint leaves

8-10 lemon slices

Juice of 2 lemons

2 tbsp, simple syrup (you may add Brown sugar, if you prefer)

500 ml, soda, chilled

Ice cubes (you can crush them if you prefer)

In bowl or a jug, muddle together lemon juice and mint leaves such that mint leaves are bit bruised.

Add simple syrup, which is just sugar dissolved in water and mix well.  At this stage you can refrigerate the prepared mixture if you prefer to serve this later.

Add ice cubes, lemon slices, mint leaves in glasses to be served.

Fill half of each serving glass with mint lemon  and simple syrup mixture

Top with chilled soda.

Serve immediately.
